I just learned about a really cool method called Dry Brining.

In my previous blog about the importance of vitamin D, I think you'll enjoy this simple salmon recipe.

It goes something like this...

  • Take a nice Wild Caught Salmon filet, skin on.  
  • In a bowl blend together 1 part raw sugar and 3 parts sea salt.  
  • Toss in some fresh chopped herbs that appeal to you for salmon. 
 For example I used a 5-6 oz piece of salmon, 1/4 cup sugar, 3/4 cup salt and about 1/3 cup fresh chopped dill.
  • In a glass dish spread a layer of the dry brine on the bottom.  
  • Place the piece of salmon on top then spread the remaining brine on top of the salmon and sort of press it into the flesh.
  • Wrap in plastic wrap then place in fridge for about 30 minutes.
  • In the meantime, prep some veggies of your choice to go with the salmon.  
For example...I charred some broccolini to a crisp tender in a pan with a little olive oil sprinkled with an aromatic spice blend.  Very simple.
You may want to serve this with some brown rice, as well.  Cook the rice in a chicken stock for more flavor and add additional veggies here, such as diced carrots and fresh peas.
I think a side of fresh Pico De Gallo would work well with the salmon as a side. 

  • Remove the fish from the fridge after 30 minutes and dip the fish in a bowl of cool water to rinse off the brine mixture.  Pat dry with paper towel.
  • Heat a skillet to medium with a little olive oil seasoned with some salt and maybe some dried herbs...just anything to impart more layers of flavor.
  • Place fish, flesh side down into skillet and when the fish cooks about halfway up flip and cook skin side down. 
Serve alongside the veggies and you will have a flavorful, satisfying meal that was prepared in the most unique and simple method.
